Pesto pumpkin pizza with rocket

I know this recipe doesn’t sound too difficult, but Al made it for me the other night and it tastes amazing! Oh and it’s pretty low cal too!

Spread wholemeal wraps  with 1tspn of basil pesto.
Boil some Kent pumpkin (depending on how many pizzas you are making!). Once boiled, mash it up, and spread on the pizzas.
Sprinkle on about 1Tbs lite grated cheese and 1tspn parmesan (this makes it extra tasty!).
Layer with some mushrooms, and if you’re a meat-eater then handful of meat of your choice. (I’m I vego, so I used sundried tomatoes).
Put in the oven on 190 degrees for roughly 10 mins. Once the pizzas are cooked, put on some fresh rocket.

French toast with caramelized bananas

I know this picture doesn’t look particularly appetizing, but this was a really yummy breakfast! This worked out to be around 400 cal’s, but if you used only 1 piece of bread (which you would need, because this was way too filling!) then it would be bang on 300 cals!

For the French toast…

Whisk together 1 egg and a splash of milk (I used soy milk, it works the same for this).
Lay a slice of bread in the mixture until both sides are soaked.
Heat a frypan on medium heat and spray with oil. Cook the french toast until it is browned on both sides. Remove from heat.

For the bananas…

Slice a small-medium sized banana into roughly 4cm long pieces (cut it on an angle).
Heat another frypan (you can cook both the toast and bananas at the same time) on medium heat and place in a tiny square of margarine to coat the pan.
Place the slices of banana in the pan. After about 2 minutes, coat the bananas with 1/2 – 1 tspn honey. Flip them so the side with the honey is face down.
They will start to brown pretty quickly.
Then, sprinkle the other side with a tiny pinch of brown sugar. The bananas will begin to caramelize quite quickly, and will only need to be in the pan for about 2 minutes.

Once the bananas are cooked, take them off the heat. Place the french toast on a plate and layer with the bananas. Sprinkle with cinnamon and a small drizzle of honey.

I think it would be really yummy with maple syrup (but I’m positive that syrup is like a gazillion calories per teaspoon, so maybe leave it out!), or I also thought it would be really nice with plain greek yoghurt or some vanilla marscarpone 🙂
